Anki is a flashcard program available for both personal computers and mobile phones. It's by far the most popular resource for Japanese learning, with many options for pre-made decks and specialized add-ons specifically for Japanese. The linked guides explain how to setup Anki. AnkiConnect is an Anki add-on that enables the following two methods of studying vocabulary words: - https://yomitan.wiki/
This is a browser plugin dictionary, useful for learning new vocabulary in context. It has compatibility with Anki via AnkiConnect, so you can add new words to your own personal "mining" deck. MPVacious is a user-script for MPV which allows you to create Anki flashcards from MPV via AnkiConnect. The linked guide explains how to use it in the context of movies/TV shows, but you can also use the MPV Youtube-DL: https://github.com/yt-dlp/yt-dlp
With the setting "--write-auto-sub" in your configuration file, it should work with VODs, albeit with the extreme limitations inherent to Youtube auto-subs. Alternatively, you can also use it to learn Japanese while you watch your oshi's favorite anime.

For those who prefer not to use Anki and its add-ons, this browser extension can be used to accomplish similar things: create flashcards from subtitles and study said flashcards. The It Just Werks(TM) solution. - https://www.renshuu.org/
For those who struggle with motivation to learn, this is the best gamified option I've found so far. Its core feature is basically just another form of flashcards and you are able to make your own decks, similar to Anki. It minigames like shiritori. Note that other livers sometimes do similar streams, which you can find by searching the keywords 台詞読み (script-reading) or 朗読 (readalong.)
